Low carb, high protein & healthy fats keeping hunger locked up and you dancing longer!
Pancakes
175g Buckwheat flour
3 tsp baking powder
3 eggs
2-4 egg whites (carton)
Make it vegan 1 tbsp ground golden flax
Water (150-200ml)
Pinch pink salt
Twist black pepper
Zest & juice 1 lemon
Tbsp chopped coriander or parsley
Coconut oil (for frying)
Topping
1 packet hot smoked salmon
Or grated smoked tofu
1-2 tbsp coconut yoghurt
1/2 lemon & zest
Fresh parsley/coriander for garnish

Method
Add flour to a bowl
Whisk in eggs & whites
Add water until desired consistency (not too thin)
Mix in all other pancake ingredients
Heat a tsp coconut oil in frying pan
Use a small spoon to ladle batter
Fry in coconut oil in small batches
Leave to cool
Mix topping ingredients
Spoon topping onto pancakes
Sprinkle with herbs & enjoy!
Make ahead and freeze
